Oakhurst Inn Trout Salad Recipe

We brine and smoke our rainbow trout in house with hickory wood (but store bought smoked trout would work just fine.)

For the salad:

Diced cucumber
Diced red pepper
Diced red onion
Chopped capers
Lemon juice and zest
Chopped parsley
Chopped dill
Extra virgin olive oil
Kosher salt
Black pepper

*You will want the chopped vegetable mix to equal about 1/3 the volume of the amount of smoked trout you are using.

Flake the smoked trout into a bowl with the chopped vegetables, herbs, lemon zest and capers. Dress lightly with extra virgin olive oil and lemon juice. Toss to combine and season to taste with salt and pepper.
